Both Hands Bread


"One winter a few years back," Derek Lucchese says, "I was totally burned out. I went to Thompson (in northern Manitoba) with my partner, and I took up baking while I was there.
"One of her friends up there said 'If you like baking, you should check this book out."
The book was The Bread Builders, by Alan Scott and Daniel Wing. Lucchese followed its plans for building a wood-fired brick oven after moving to South Gillies, Ont., in 2000, and then started a home-based bread business.
Both Hands Bread has grown from 100 loaves a week in 2002 to the present 500 loaves sold every Saturday at Thunder Bay Country Market.
The bread comes in several different varieties and is made with all-organic ingredients.
